Butternut Squash Soup

Ingredients

1 large butternut squash (4-5 lbs.), peeled and cut into large chunks
1 large apple, peeled, cored and quartered
1 large onion, chopped
curry powder
salt
vegetable oil
butter (optional)

Preparation

2/3 cup Graham cracker crumbs
2 tbs. butter, melted
8oz. cream cheese (1 small package)
1 tsp. vanilla extract
1 egg
1/3 cup sugar
a miniature muffin tin and mini muffin tin liners

Preparation

Crust: combine crumbs and butter, and press into miniature muffin tins.

½ cup butter (1 stick)
1 cup sugar
